Grilled Spicy Pork Salad (Dinakdakan)




INGREDIENTS:

For Grill and boil:
  • 1/2 lb Pork ear
  • 2lb Pork belly
  • 1/2 lb Pork nape
  • 1/2 lb Pork tongue
  • 1/2 lb Pork liver
  • 1/2 lb Pork intestine (optional grilled or boiled)
For the seasoning:
  • 4 pcs kalamansi (Use Lemon or Lime to substitute)
  • 1/4 cup Coconut Vinegar
  • 2 Chopped onions
  • 4 Chopped chili
  • 4 Stalks Chopped green onion
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/8 lb Pork’s brain (boiled)
  • 3 spoon Mayonaise (optional)
INSTRUCTIONS:

1. Grill all the pork ingredients until golden brown and simmer the pork brain for 10 mins
2. Slice the grilled pork into bite size
3. In a bowl, mix the sliced grilled pork with the boiled pork brain and the rest of the seasoning
4. Add salt and pepper to taste
5. Add mayonnaise to make it thick, this is optional.
